Cranberry Dip is What’s Cookin’

This festive, fun and so very delicious holiday cranberry dip is swirled with cream cheese, jam and delicious Arkansas pecans. It only requires five ingredients and it’s now my “go-to” holiday appetizer. Guess where I found the recipe? In the new What’s Cookin’ at First Security Bank Volume 2. Did you know that it is not your Aunt Doris who is the official nut of Arkansas, it is the pecan? In 2019, Arkansas was estimated to produce 1.5 million pounds of pecans.

First Security Bank has published the second edition of its highly popular cookbook with over 800 delicious recipes. I’ve looked it over cover to cover like I was reading a novel, and every recipe sounds delicious and super easy to make. Now that’s a cookbook after my own heart. Over the next year, I will get to try the recipes then share some of them with you here on OnlyinArk.

In December, I’m looking for holiday recipes and even recipes that would work great for New Year’s Eve. I found the perfect recipe that works as a great appetizer for both holidays. There are only five ingredients and it’s a breeze. I should tell you this Cranberry Dip is absolutely addictive to eat, the perfect bite of sweet, tangy, and creamy all rolled into one.

With those flavor profiles in mind, I thought this dip would be the perfect accompaniment to my holiday Charcuterie board. You know…those sweet and salty elements combined. I added a couple of different types of crackers, summer sausage, different cheeses, nuts, pretzels, and put some of the cranberry dip and apricot jam in little bowls. My crew will devour everything on this board.

Cranberry Dip

Ingredients 

  • 1 (12-ounce) package fresh cranberries
  • 1 cup white sugar
  • 1 cup apricot jam
  • 1 cup chopped pecans
  • 1 (8-ounce) package cream cheese

 

Directions

Preheat oven to 350 degrees. Combine cranberries with sugar in a 2-quart baking dish with a lid, stirring well to coat all cranberries. Bake in the preheated oven, covered, for about 30 minutes until the cranberries pop and release their liquid. Remove from oven and stir in the apricot jam and pecans. Refrigerate overnight to blend the flavors.

To serve:

Allow the cream cheese to come to room temperature. Pour cranberry dip over the block of cream cheese on a serving dish. Serve with buttery round crackers or small pretzels.
