Heavenly Filled Strawberries Perfect for Valentine’s Day

This Valentine’s Day, I am bringing home some romance with food just in time for the second volume of the “What’s Cookin’ at First Security” cookbook. February’s featured recipe: Heavenly Filled Strawberries. Because it turns out this luscious red berry can taste even more divine than when it’s eaten alone as a simple fruit.

Over 200 recipes are published in the Arkansas-based bank’s cookbook, all submitted by employees and customers. Proceeds from the sales will go to the Arkansas Hunger Relief Alliance to help feed people across the state. The cookbooks can be purchased for $20 at First Security Bank locations.

Mary Ann McClanahan, a teller at First Security Bank in Conway, submitted this delightful strawberry recipe, a perfectly sweet way to celebrate romance with the Valentine in your life.

The Town of Romance

 Speaking of romance, we have it right here in Natural State. A town, that is. Romance, Arkansas is located about 50 miles northeast of Little Rock in White County and gets plenty of traffic ahead of the holiday for special friends and lovers.

The town’s special namesake cancel stamp brings visitors (and lots of mailed letters) through the post office to get “Romance” inked across their envelopes. I was the lucky recipient of postmarked mail from the town when my husband joined in on a motorcycle ride just to send me a Valentine’s Day card from Romance, Arkansas.

While Romance might be a destination for lovers, this Heavenly Filled Strawberries recipe is definitely a destination for the heart. The way to some people’s hearts is indeed through their stomachs, and this recipe delivers to both.

You only need five ingredients.

Recipe Tips

  • Set the cream cheese out and let it come to room temperature before using.
  • Slowly mix the powdered sugar into the softened cream cheese. If you turn your mixer on high, cream cheese bits will jettison all over your kitchen walls.
  • Use a zipper storage bag with one corner cut off to pipe the cream cheese into each strawberry.

You can easily add your own variations like grated white chocolate or even dip the bottom of the strawberries in melted chocolate. My mind was racing at the possibilities. I hope yours does, too.

Heavenly Filled Strawberries

Ingredients

  • 1 pound fresh strawberries
  • one 8-ounce package of cream cheese and one 3-ounce package of cream cheese, both softened
  • 1/2 cup powdered sugar
  • 1/4 teaspoon almond extract
  • grated chocolate

Directions

Remove stems from strawberries. Cut a deep X in the tip of each strawberry. Gently spread berries open. In a small bowl, beat cream cheese, powdered sugar, and almond extract until light and fluffy. Pipe or spoon about 2 teaspoons into each berry. Sprinkle with grated chocolate. Chill until ready to serve.
