I whipped up this recipe knowing I had busy days of cooking ahead and did not want to worry about what my family would eat for breakfast. It was a hit! They ate it for breakfast multiple days in a row and even warmed it up for a quick dessert.

Preheat oven to 350 degrees. Remove cinnamon rolls from packages and cut each roll into sixths. Drizzle melted butter in a 9 x 13-inch pan. Spread cinnamon roll pieces evenly in the pan. In a separate bowl, whisk eggs, milk, cinnamon, and vanilla until well combined. Pour egg mixture over cinnamon rolls. Bake for 30-35 minutes or until the top of the casserole is golden brown and the center is set. Prepare icing by combining reserved cinnamon roll icing with powdered sugar, cream cheese and 1 tablespoon milk. Whisk until smooth. Pour icing evenly over baked casserole.
