Cinnamon Roll French Toast Casserole

The perfect breakfast recipe is at your service during holidays or any time of year. This Cinnamon Roll French Toast Casserole will take the guesswork out of breakfast preparation that your whole family will love.

I whipped up this recipe knowing I had busy days of cooking ahead and did not want to worry about what my family would eat for breakfast. It was a hit! They ate it for breakfast multiple days in a row and even warmed it up for a quick dessert.

Tips & Ideas

  • I followed the original icing ingredients but Mallori adds a note in the recipe to make extra icing for all those icing lovers. For extra icing, combine 2/3 cups powdered sugar and 3 ounces softened cream cheese with 1 ½ tablespoons milk.
  • As always, do not forget to set your cream cheese out to soften.
  • When you arrange your cinnamon roll pieces, they need to be placed in an even single layer.
  • If you use small eggs, add 1 to 2 more eggs to the egg mixture.
  • You can prep this casserole the night before and bake the next morning. Simply follow the recipe directions and refrigerate overnight. The morning of, bake in a 350-degree preheated oven. This may require an additional 5 mins of baking.
  • You can even mix up the icing the night before and store it in a separate bowl in the refrigerator. Pull out of the fridge in the morning when you bake your casserole. Give it a good whisk and pour over your baked casserole. Add a splash of milk if the icing is too thick.
  • Refrigerate leftovers and heat individual portions in the microwave for 30 seconds.

Cinnamon Roll French Toast Casserole

Ingredients

  • 2 (17.5-ounce cans) refrigerated cinnamon rolls, icing reserved
  • 2 tablespoons melted butter
  • 4 large eggs
  • 1/3 cup milk
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla

Icing:

  • ½ powdered sugar
  • 2 containers of reserved icing
  • 2 tablespoons cream cheese, softened
  • 1 tablespoon milk

Directions

Preheat oven to 350 degrees. Remove cinnamon rolls from packages and cut each roll into sixths. Drizzle melted butter in a 9 x 13-inch pan. Spread cinnamon roll pieces evenly in the pan. In a separate bowl, whisk eggs, milk, cinnamon, and vanilla until well combined. Pour egg mixture over cinnamon rolls. Bake for 30-35 minutes or until the top of the casserole is golden brown and the center is set. Prepare icing by combining reserved cinnamon roll icing with powdered sugar, cream cheese and 1 tablespoon milk. Whisk until smooth. Pour icing evenly over baked casserole.
