Whether it’s cold outside or you’re just feeling under the weather, soup is the comfort food we all crave. This recipe comes together “souper” easily and just makes you feel warm and cozy.

4 tablespoons unsalted butter
1/2 large onion, cut into wedges
1 (28-ounce) can crushed tomatoes
1 1/2 cups chicken broth or water
1/2 teaspoon of salt or more to taste
Melt butter over medium heat in a Dutch oven or large pot. Add onion wedges, tomatoes, chicken broth, and salt. Bring to a simmer. Cook, uncovered, for about 40 minutes. Stir occasionally and add salt to taste. Blend soup and season to taste.
A quick and easy bonus edition to this soup is some yummy cheese toast. It’s the perfect accompaniment to soak up the soup. All you need is your favorite bread and favorite cheese. I grabbed a loaf of Italian sliced bread from the bakery plus Gouda, and Gruyere cheese.
Place sliced bread on a sheet pan. Top with slices of cheese and bake under the broiler on low. This only takes a few minutes so keep a close eye. Now dunk in your tomato soup and enjoy.
