Tomato Soup Is the Soup of the Day

I

It’s soup season and this soup du jour uses 3 simple ingredients to make a delicious tomato soup. Whether it’s cold outside or you’re just feeling under the weather, soup is the comfort food we all crave. This recipe comes together “souper” easily and just makes you feel warm and cozy.

Easy Peasy Pleasy Tips

  • An immersion blender is the tool of the day on this soup. I love it because all ingredients can be blended right in the pot.
  • No worries if you don’t have an immersion blender, just pull out your regular blender. Keep in mind the ingredients are going in hot so keep a kitchen towel over the top.
  • The recipe gives you the option of using water or chicken broth/stock. The use of chicken broth will give a deeper, cooked-all-day kind of taste.

Thank you to Alexis Chancellor from First Security’s Bryant Alcoa Banking Center for submitting an easy comfort soup.

Bonus – Cheese Toast with your Tomato Soup!

A quick and easy bonus edition to this soup is some yummy cheese toast. It’s the perfect accompaniment to soak up the soup. All you need is your favorite bread and favorite cheese. I grabbed a loaf of Italian sliced bread from the bakery plus Gouda, and Gruyere cheese.

Place sliced bread on a sheet pan. Top with slices of cheese and bake under the broiler on low. This only takes a few minutes so keep a close eye. Now dunk in your tomato soup and enjoy.
